Shishito Surprise Pepper (No Heat, most of the time...)

The shishito is a Japanese variety producing sweet green peppers that turn red when mature. Peppers are great grilled with olive oil and sea salt, with fresh lemon juice at the end. A summer cook out favorite, great with an ice cold beverage. Also a great pickling pepper. Now this variety is called the Shishito Surprise, because once in awhile one of the fruits will surprise you or one of your guests since it is blistering hot. Sort of a chili pepper Russian Roulette, of course I was the one who got burned in this game last year....
